Hi Strus! The recipe as listed will work for either three 6″ or two 8″ pans. They layers are a bit thinner but should be about 1.5″ tall or so. If they are flatter than that then I would check your baking powder to make sure it is still fresh.

At first, I made one batch and split it across two tins but the cakes are very flat, I thought maybe I did not mix it well, then I made another batch and put all butter in one 8 inch tin, it looks ok. Is it meant to double in size? Or what am I doing wrong?

Hi Cari! Did it get completely hard? It should have been spreadable after sitting overnight. You can warm it in the microwave in increments and stir in between to thin it out a bit.

I rarely leave reviews but I absolutely had to pop on and say how fantastic this recipe was. This cake was really easy to bake, I multiplied the ingredients by 1.5 times to make a 3 layer cake (I only had 8″ pans), baked with homemade baking strips and it was absolutely perfect!
I ended up whipping the ganache frosting and it was an absolute hit. Perfect sponge texture, perfect bake after 30 mins and the density was spot on. The one downside was the two hours it took me to shell pistachios but hey, it was totally worth it!
