Hi Anna! Because that isn’t the recipe. These meringues are made using the Swiss method where you cook the egg whites and sugar together first and then whip. It makes a more stable meringue.

I was a little disappointed. The raspberry caramelized too much and the tops were brown instead of red. Yes, they were chewy on the outside but too chewy for me. On the other hand, my husband who has a big sweet tooth liked them.
