Metric conversion user here from Australia. Never had an issue, the cake is always fantastic. I use US Customary for all-things cups and teaspoons and use Metric when converting oz. to gs. Perfection, every time! This cake is so flavoursome and versatile! Sometimes, I put my own spin on it by adding homemade seedless passionfruit curd between the layers and crushed meringue pieces to the decoration to create a “Pavlova” flavour. Best Swiss meringue buttercream recipe too, a staple! In fact, that’s why I am here leaving the review. I hopped back on the website to re-read the recipe. Keep up the amazing work x

Hi Sarah! It will be fine in the fridge for a few days 🙂 Note that the frosting will get very firm (like butter) when chilled. Be sure to take the cake out 2-3 hours before serving.
