It should have worked fine in two 8″ – each cake layer would be close to 2″ tall. If they were shorter than that I would check that your baking powder is still fresh. I can’t comment on the zero sugar cake mix and sauce as I haven’t tried that. For best results I would make the recipe as written.

Thank you I used 2 8 inch cakes and they didn’t really rise so I’m not sure what I did wrong. They are half the size of what I did last week…

Could I use zero sugar box cake mix and butterscotch sauce instead of butterscotch pudding mix?

Hi Stephanie! You can use bigger pans but you’d need to adjust the recipe. Converting pan sizes is always tricky. Here are some sites I use as a guideline:

Any cream soda should work fine.

But the second time I made it I added a bit of rum extract and a 1/2 mix more of butterscotch pudding and it helped it have more butterscotch flavor in the cake itself.

The frosting is great! And was perfect for creating a hedwig cake for a Harry Potter themed birthday! It pipes great! At least on a cold winter day 😉
