Hi Emily! So happy you loved it. The recipe as-is will work as cupcakes. You just need to reduce the baking time. Start checking at 15mins or so. The recipe should make 18-24 depending on size.

Made it and loved it!!! I came across this recipe while looking for a way to use up some leftover Italian meringue from a project last weekend and since I love Earl Grey tea decided to try it. l thought it was wonderful, with or without any icing, and I didn’t make the syrup. I used a 10 inch square pan (12 cups, so the same as the 3 6-inch layers). The flavor of the tea really comes through. Gave some to family members who are not tea drinkers but just told them it’s spice cake, and they devoured it. Will be making it next for my tea loving book club friends.

I have made this cake recipe twice with the Swiss meringue buttercream and making it for a third time with American buttercream. Very excited and it’s always so delicious! Great and simple recipe! A crowd favorite

Hi Val! Only if you’re doing pastels. It’s really hard to get a deep color with Swiss buttercream.
