I let everyone in the family pick a cake for their birthday. My daughter chose this cake and I truly believe it is the best cake I’ve ever had! I was doubtful when making it because I felt the ganache would overpower the other flavors, but it was perfect. We have been talking about how good this was since Saturday! Will probably be making it every year!

In reply to Jade. Hi Jade! This recipe makes three 6" layers or two 8" layers. If you want two 6" layers you need to make 2/3rds of the recipe. You can do this by changing the Servings from 12 to 8 and the amounts will update automatically.

I’m planning on making this cake for a Saturday party, but wanted to break up the steps over a couple days. Should you brush on the simple syrup before putting the cake in the freezer or fridge? Or wait until assembly?
